Influence of Modified Atmosphere on Quality Attributes of Blueberry

|
Blueberry was stored at 15℃ in modified atmospheres of six levels of CO₂ at each of three constant O₂ levels, and quality attributes of physical and chemical characteristics were determined after 10 days. Physical keeping quality (fraction of sound fruits) was higher with lower O₂ and higher CO₂ concentrations. Soluble solid to titratable acidity ratio was greatly affected by CO₂ concentration, having lower value at higher CO₂ atmosphere. Optimal modified atmosphere for storage and packaging of blueberry was found to be 17~18% CO₂ with ≤9% O₂. Maintaining the quality of blueberry was found to be highly interrelated with respiration.
